It's my personal opinion that when you are making ribs, you either have to make them right, or not at all. To make them right requires pretty much one easy step: slow cooking for hours. It was apparent that the ribs I ordered were not slow cooked. The skin clung to the meat and the meat clung to the bone. I had to waste a lot of rib because it was surrounded by grissle and tough skin. When ribs are slow cooked for 4 hours, all you have to do is shake the pan and everything will slide off of everything else. This was the opposite. If you say "Well, I don't have the time to cook ribs that long" then you should take them off the menu until you have the time. The baked beans were really good though, and my wife liked the pulled pork sandwich. I personally went to try the ribs and was very underwhelmed. Good atmosphere though.
